Everything 'Old' is New Again at The Old Town Junction

When you have a culinary mastermind like Chef Daniel Otto at the helm, you can't expect a menu to sit idle - and when that chef has unlimited access to the finest seasonal ingredients, you can expect new dishes to show off peak ripeness and flavor.

That's what happened on a recent patio-perfect, sunshiny day. Poised with one of Junction's kitchen-inspired cocktails (The oft-celebrated OTJ Lemonade 2.0 with Suntory Toki Japanese whiskey, pineapple, fresh lemon, ginger syrup, habanero firewater and mint.), I dove in eagerly to a stylishly-plated Seared Day Boat Scallops starter as the chef explained how Junction's signature dishes come to be.

"We build flavors before anything else," says Otto. "Balancing bitter, sweet, crunchy, salty, spicy - the details evolve from the plate up, with an end result that makes the mouth dance."

Seared Day Boat Scallops
with pea puree, corn relish, yuzu gel, prosciutto and potato.

Adult Mac & Cheese
with gnocchi, bechamel, braised short rib, fried cheese curds and white cheddar.

Poached Octopus & Shrimp Aguachile
with lime juice, tomato, cucumber water, serrano essence, pico, avocado and tostada.

Hummus
with micro herbs, tzatziki, roasted veggies, flatbread and chips.

Impossi-bowl
with Impossible "meat," ginger, Thai basil, lemongrass, cucumber-mint salad, rice, peanut sauce and cashews.

For Chef Daniel Otto, Catering is an Art Form
Sure, any restaurant can package their greatest culinary hits and serve it to your crowd - but for a true high-end cuisine experience, there's a different way of doing things. "We take catering to the next level," says Chef Daniel Otto of The Old Town Junction. "Whether it's onsite or off, we meet with clients to craft custom experiences and from-scratch menus; we do a site visit; we ask about or arrange your cutlery. Premier preparation leads to premier results." That means Chef Otto usually prepares your meal on site for peak freshness - and only the finest staffing will do. "We cater everything from massive weddings to intimate anniversary celebrations for two. The size may change, but our attention to detail does not," says the chef. For no-minimum semi-private events on site, craft cocktail pairing parties have become very popular, as have small-bite menus that excite adventurous guests.
